I will try to remember to post this every week.
On Fridays I make the menu for the next 6 – 7 days. I do this because I then can make my grocery list and hit the Saturday farmer’s market where I buy 80% of what I need then off to Ellwood’s local market, Trader Joes, and occasionally Whole Foods. Taking 2 1/2 hrs. to shop for all the food I need is time well spent – you are buying the food that will nourish your family throughout the week!
Here we go:
Saturday: Fried okra (coming in fast in my garden) on a bed of gluten free pasta with fresh tomato sauce, garlic and shredded Parmesan cheese on top
Sunday: Mexican quesadillas with green pepper, onion, homemade salsa, refried beans (pinto or black), shaved cheddar cheese and a treat of guacamole
Monday: Salad loaded with veggies and sunflower seeds tossed with homemade tahini dressing and served with crustless quiche
Tuesday: BQ local GMO free tofu sauteed with onion and pepper on a bed of rice
Wednesday: Stuffed potatoes with black beans, onion and other sauteed veggies and sprinkled with cheddar cheese
Thursday: Asian rice noodles with squash, zucchini, mushroom, and onion in a Thai sauce
It does not take more than 30 min. to create any of these nutritious locally grown, seasonal, vegetarian meals. Family time is sacred and dinner is the ideal time to gather and share our day with each other. No phones, devices or TVs allowed!! And make a lot so you have leftovers for lunches!
